Because of the climate and the landscape South Tyrolean cuisine is influenced by the Mediterranean: Among the particularly healthy, popular and light spring dishes asparagus, also known as the “vegetable of kings”, has long been one of the South Tyrolean delicacies.
The quality assured Margarete asparagus sold in Terlano is named after the last Regent of Tyrol, who liked to spend her time in Castel Maultasch above Terlano. Its fine and elegant taste comes from the high quality, protected cultivation, the fast processing and the appropriate storage.
The annals of South Tyrolean cuisine show that this vitamin rich vegetable has been grown in the renowned asparagus triangle of Vilpiano, Settequerce and Terlano for centuries. Already at the end of the 19th century Terlano was a popular destination for the citizens of Bolzano, who enjoyed the white asparagus there. In addition to the detoxifying aspartic acid the tasty asparagus also contains important vitamins and minerals such as potassium, phosphorus and calcium.
